Sausage and Rice

1 cup diced celery
1 cup diced yellow onion
1/2 cup diced green pepper (I don’t add this)
1 lb ground sausage (I use Regular or Hot or a mix of both) If you are using regular sausage, add a dash or two of Cayenne Pepper.
2 cups of uncooked Minute Rice
2 cups of beef broth
1 small can of mushrooms with juice

Brown together sausage (add cayenne pepper if needed), celery, onion, peppers (if adding). Drain. Set aside.

Spray a 13″x9″ foil pan with Pam Spray. Combine rice and broth in foil pan. Gently stir rice until all rice is wet. Layer the meat and mushrooms on top of rice, do NOT stir.
Cover with foil and bake in 375 degree oven for 25 minutes. Take out of oven and stir rice and sausage together, recover and bake for 25 more minutes.

Sausage and Rice is meant to be a little spicy. You can use “Hot” Owens sausage for an added kick.
